Two Egg Omlette With Spinach


2 eggs
1 tsp dried mixed herbs
1 handful spinach roughly chopped
Seasoning to taste

What to do:

  1. Mix all the ingredients well in a bowl or jug
  2. Pour into a frying pan (if non-stick you may want to use a little butter or oil)
  3. Fry on a medium heat until it is almost cooked
  4. Fold in half and cook both sides for a minute or two until fully set
  5. Serve with a handful of spinach


  • For a little extra flavour, fry a little onion, garlic or chilli in the pan before adding the egg mixture
  • For a lighter snack just use one egg (or use more eggs for a large/family size!)
  • Other ingredients include mushrooms, ham, peppers (fry off before adding the eggs) or cheese which can be added just before you fold
