Spicy Meatballs With Spaghetti

Spicy Meatballs

Serves 4-6

Preparation time: 20 minutes

Cooking time: 40 minutes

For the Meatballs:
450g Mince (this recipe are beef but you can use any mince)
1/3 onion finely chopped (reserve the remainder for the sauce)
2 tbsp fresh parsley
1/2 tbsp dried mixed herbs
1/2 egg, beaten
splash of Worcester Sauce
Ground pepper and salt for seasoning

For the Sauce:
1 tbsp olive oil
1 onion finely chopped (or remainder of the one used for the meatballs)
2 garlic gloves crushed
2 tbsp curry paste
1 tbsp tomato puree
800g chopped tomato

Allow 75g wholewheat spaghetti per person

What you need to do:

  1. Mix all the meatball ingredients really well together in a bowl (hands work best!)
  2. Make into about 15-16 golf ball sized balls
  3. Brown the meatballs in frying pan on a low-medium heat (no oil is needed for a non-stick pan)
  4. Meanwhile, soften the onion and garlic in a large saucepan/frying pan
  5. Add the curry paste and tomato puree and cook for a few minutes until all the flavours have blended
  6. Add the browned meatballs and mix well with the onion/curry paste mix for a few minutes
  7. Add the chopped tomatoes
  8. Simmer for 20 minutes while you cook the spaghetti
  9. Bring a saucepan of water to the boil and add the reguired amount of spaghetti
  10. Bring back to the boil and cook for 10-12 minutes or until tender but not soggy!

  • This dish can be made in advance and re-heated
  • You can freeze some or all of the meatballs after step 2
  • Break the spaghetti into thirds before cooking (unless you can eat it a dignified way, unlike me!)
